Baking Daily Since 2024

Cookies worth the wait

Handcrafted in small batches with European butter, single-origin chocolate, and zero compromises. Each cookie is a two-day process — because greatness takes time.

A bakery ledger, not a marketing script

The dough on our bench has a clock, a temperature, and a plan. This is the part of the day that makes the cookie.

Today's note: the dough should feel dense, glossy, and slightly louder than it was yesterday. If it slumps, we wait longer.

01

Butter first

Browned until the kitchen smells like hazelnuts, then cooled before it touches sugar.

02

Cold rest

Flavor deepens when the dough spends two nights in the walk-in, not one rushed hour on a sheet pan.

03

Bench finish

Every ball is hand-pressed with extra chocolate on top so the tray looks human before it hits the oven.

Two days for a cookie?

Yes. We rest our dough for 48 hours before it ever sees an oven. This cold fermentation gives the flour time to fully hydrate, the butter time to saturate every granule of sugar, and the vanilla time to bloom. The result is deeper flavor and a texture that factory cookies can't touch.

We use 82% butterfat European butter, single-origin chocolate from family-owned cooperatives, and organic flour milled within 50 miles of our kitchen. Every ingredient earns its place.
