Two days for a cookie?
Yes. We rest our dough for 48 hours before it ever sees an oven. This cold fermentation gives the flour time to fully hydrate, the butter time to saturate every granule of sugar, and the vanilla time to bloom. The result is deeper flavor and a texture that factory cookies can't touch.
We use 82% butterfat European butter, single-origin chocolate from family-owned cooperatives, and organic flour milled within 50 miles of our kitchen. Every ingredient earns its place.
